(1) Esters: ASCORBYL TETRAISOPALMITATE (or tetrahexyl decyl alcohol ascorbate), ascorbyl palmitate;
(2) Salt derivatives: MAGNESIUM ASCORBYL PHOSPHATE, SODIUM ASCORBYL PHOSPHAT;
(3) Glycosides: ASCORBYL GLUCOSIDE, 3-O-ETHYL ASCORBIC ACID.

 

In terms of stability, esterified vitamin C> vitamin C glucoside> vitamin C salts> pure vitamin C.

Classified from its solubility, vitamin C derivatives are further divided into water-soluble, oil-soluble and hydrophilic and lipophilic.
